AMAZING CARROT CAKE
One of the best cake I made and became my favorite pastime is my very own Carrot Cake. It’s very easy to make, perfectly moist, full of flavor and good for the health. It’s totally good for family anytime all year long.
Truly, this is also a crowd’s favorite. If you haven’t try this yet, this will surely amaze you. It’s totally hassle-free. Once you will start to make it, surely you want it all over again.
My technique to make it more unique, I add little bit of ground cinnamon, ginger and nutmeg (just a pinch to balance the taste).

Ingredients
- 3 cups all-purpose flour
- 3 teaspoons baking soda
- 1 teaspoon salt
- 3 teaspoons ground cinnamon
- 4 large eggs
- 2 1/2 cups sugar
- 1 cup vegetable oil
- 1 cup buttermilk
- 3 teaspoons vanilla extract
- 3 cups grated carrot
- 2 (8-ounce) can crushed pineapple, drained
- 2 (3 1/2-ounce) can flaked coconut
- 2 cup chopped pecans or walnuts
- Buttermilk Glaze
- Cream Cheese Frosting
How to Make It
Step 1
Line 3 (9-inch) round cake pans with wax paper; lightly grease and flour wax paper. Set pans aside.
Step 2
Stir together first 4 ingredients.
Step 3
Beat eggs and next 4 ingredients at medium speed with an electric mixer until smooth. Add flour mixture, beating at low speed until blended. Fold in carrot and next 3 ingredients. Pour butter into prepared cake pans.
Step 4
Bake at 350° for 25 to 30 minutes or until a wooden pick inserted in center comes out clean. Drizzle Buttermilk Glaze evenly over layers; cool in pans on wire racks 15 minutes. Remove from pans, and cool completely on wire racks. Spread Cream Cheese Frosting between layers and on top and sides of cake.
